I’m so sorry for the lack of posts lately, as you may know if you follow me on Instagram, I have been working on something so exciting with blogger @dannibelle. We are making an eBook together, Simply Good. which will be ready before xmas! It’s been such a busy time for me but I can’t tell you how excited I am to share our recipes with you. The eBook will have sweet AND savoury recipes – and trust me – they’re delicious.
Now, back to the cake. I made this yummy clean chocolate sponge cake for my gorgeous boyfriend’s 25th birthday. And it was a hit. When you eat a spoonful of cake, there’s so many different tastes that combine together so nicely. The sponge cake, strawberries and creamy chocolate pair perfectly together. Happy baking! X
Ingredients
Chocolate sponge cake:
1 3/4 cup spelt flour or flour of choice
1/2 cup cacao powder
3 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
pinch of salt
10 pitted dates, chopped
1/2 cup coconut oil, melted
3 eggs
1 tsp vanilla essence
1 cup almond milk
Chocolate mousse:
1 cup cashews, soaked for 10 minutes
2/3 cup cacao powder
1 cup rice malt syrup
pinch of salt
1 cup shredded coconut
1/2 cup water
Decoration:
2 punnets of strawberries, chopped in half
Method
For chocolate sponge cake:
- Preheat oven to 180C and spray a circular baking pan with baking spray
- Combine flour, baking powder, baking soda, cacao, cinnamon and salt in a large bowl
- In a separate bowl, add coconut oil, eggs, rice malt syrup and vanilla and mix until combined
- Make a well in the centre of the dry ingredients and add liquid mixture. Stir through milk and dates and fold lightly
- Transfer mixture to cake pan and place in the oven for 40 minutes. Let cool while you prepare the chocolate cream
For chocolate mousse:
- Blend all ingredients except water. Add water if needed to create creamy texture and place in fridge for 10 minutes
For decoration:
- Cut the cake in half carefully through the middle
- Add half of the chocolate cream to top of the bottom half of the cake and smear until even. Add strawberries and place the second cake half on top.
- Add the remainder of the chocolate cream to the top of the cake and smear until even. Add strawberries around the edges and one in the middle. Serve and enjoy!
