Pods

Pods were my FAVOURITE snack when I was a kid. I loved the different flavours, the crunchy biscuit base and the fact they were so tiny so you couldn’t count how many you were consuming (the more the merrier!) it was way too easy to eat a whole packet in one sitting – and I knew I needed to make them clean.

Introducing my TWIX pods! You can make these in any flavour (mint, snickers, cherry ripe) and god, they are so similar to actual pods it makes me so happy. One batch makes 18 which may be a little less than the packet, but I guarentee you’ll have to stop yourself from eating all of them at once.

Ingredients

Biscuit base:

1 cup spelt flour
1 tsp baking powder
Pinch of salt
1/4 cup rice malt syrup
1/4 cup coconut oil (melted)
Dash of almond milk
Dash of vanilla essence
2 squares of dark chocolate (melted)

 

Filling:

1/4 cup almond butter
1/4 cup coconut oil (melted)
1/4 cup rice malt syrup
Pinch of salt
70g 70% dark chocolate (melted)

Method

For biscuit base

  • Preheat oven to 190 degrees and spray a mini hole muffin pan with baking spray.
  • In a large bowl combine flour, salt and baking powder lightly.
  • In a separate bowl add rice malt syrup, coconut oil, milk, vanilla and melted chocolate and mix well.
  • Make a well in the centre of dry ingredients, add wet mixture and fold until a cookie dough texture is formed.
  • Grab a spoonful of dough and press it with your fingers into the mini hole muffin pan to make a well in the centre of each pod. Place in the oven for 10 minutes, let cool and remove from pan.

For filling

  • In a medium bowl combine coconut oil, almond butter, rice malt syrup and salt.
  • Spoon a teaspoon of filling into each pod and place in the fridge for 15 – 20 minutes.
  • Drizzle melted chocolate over the solid filling of each pod and place back in the fridge for 15 – 20 minutes.
  • Enjoy!
