It’s winter! Well, it’s felt like winter for way too long (it’s only been a month) but even with a summery Japan trip in between, there’s no denying the cold weather can get you and your stomach down. Am I the only one who becomes extra hungry during these chillier months?
When I think of winter, I think of apple crumble. Warm. With lots of gooey chopped apple and a toasty, tasty crust. If you love traditional apple crumble, this recipe is for you. Happy baking!
Ingredients
Apple filling
3 apples, peeled and chopped
1/2 cup water
2 tbsp rice malt syrup
Pinch of cinnamon
1 tbsp marsala (optional)
Crumble
1 cup rolled oats
1/2 cup spelt flour
2 tbsp rice malt syrup
1/2 cup shredded coconut
1 tsp cinnamon
2 tbsp coconut oil
Method
- Preheat oven to 190 degrees
- In a saucepan, place apples, water, rice malt syrup, cinnamon, marsala on low heat and stir lightly. Bring to boil and simmer for 10 minutes. Place in a small – medium sized ramekin to cool while you prepare crumble
- In a large bowl combine rolled oats, spelt flour, shredded coconut, cinnamon, rice malt syrup and coconut oil (not melted). Use your hands to combine the ingredients, ensuring the coconut oil is distributed evenly with the other ingredients.
- Place crumble over the apples and place in oven for 30 minutes or until golden. Let cool, briefly, and serve it up :). Enjoy
